mysterious 80s Bolay / mysteriöser Bolay der 80er Jahre

Nein, ich habe nicht aufgehört, Puer zu trinken. Genaugenommen habe ich hier 9 Tees, zu denen ich noch Verkostungsnotizen anfertigen kann. Heute schreibe ich von einem mysteriösen Glücksfall.

No, I have not stopped drinking Puer tea. Actually I still have 9 teas I need to write reviews about. Today will be about a mysterious stroke of luck.




Ein kleiner (aber sehr erfreulicher) Teil meiner Arbeit ist es, angehende TeeSommeliers auszubilden. Im aktuellen Kurs ist eine Teilnehmerin, die gelegentlich nach Hongkong reist. Als Teebegeisterte nutzt sie jene Gelegenheiten auch um Tee einzukaufen. Sie gab mir Proben von zwei Puer - als ich sah, dass einer aus den 1980er Jahren stammte, habe ich die Spenderin nicht aufgeklärt, dass ich nicht im Prüfungsausschuss bin. - Nein, im Ernst - die Tees sind nicht als Bestechung gemeint gewesen, die großzügige Dame wollte nur wissen, was ich von den Tees halte.
Wegen des Bezugs zu Hongkong habe ich heute im Titel das Wort verwendet, das laut englischer Wikipedia kantonesisch für "Puer" ist: Bolay.

A tiny (but really enjoyable) part of my work is to train tea sommeliers. During the current course there is one participant who travels to Hongkong from time to time. Being a tea lover, she uses those trips also for buying some tea. She gave me samples of two puer - seeing that one of them was from the 1980s, I kept my mouth shut, not letting her know that I'll not be on the jury for the final exams. - No, just kidding - the teas were not meant as a bribe, the generous lady just wanted to know what I think about the teas.
Due to the teas being bought in Hongkong, I've chosen the cantonese word (if wikipedia can be trusted) for Puer: Bolay.


Die großzügige Frau L. hat diesen Bolay in einem Geschäft gekauft, wo dieser Tee nicht in Bing-form, sondern auseinandergenommen in einem großen Keramikgefäß aufbewahrt wurde. Davon wurde eine Tüte befüllt, die etikettiert wurde mit:
甜醇大葉種8O年代
Mit Hilfe eines Teefreundes habe ich daraus "reine Süße, Großblatt-Typ, 80er Jahre" gemacht.
Wenn man z.B. im empfehlenswerten Blog "A Tea Addict's Journal" nachliest, wie Puer traditionell in Hongkong gehandelt wird, ist es ganz üblich, für den schnellen Verkauf und Konsum die Bing zu zerteilen und lose den Tee abzuwiegen. Zum Teil erhalten die Tees von den Händlern neue Namen - oder werden sogar als Hausmischung neu zusammengestellt. Ob ich hier einen sortenreinen Tee oder eine Mischung habe, kann ich nur erraten.

The generous Mrs. L has bought this Bolay in a shop, where it was not stored in Bing shape, but dissembled as a loose leaf tea in a big ceramic jar. Out of this jar a bag was filled and labelled with:
甜醇大葉種8O年代
With the help of a teafriends language skills I read this as "pure sweetness, big leaf type, eighties". 
If you read about the practices of traditional Puer (Bolay!) retail in Hongkong (great reading on this topic and so much more: "A Tea Addict's Journal"), you will find that it is quite common to take bings apart for short term retail and consumption, sometimes renaming the teas according to the vendors marketing preferences and even sometimes doing a "houseblend" of several different bing. Whether this is a single factory/vintage tea or a wild blend I can only guess.



Jetzt aber mal wirklich direkt zum Tee - zum Anfang das trockene Blatt: Was für ein Duft - der schriet nach Indiana Jones! Nur noch ganz wenige Blätter hängen aneinander von der ursprünglichen Bing-Pressung; ins Auge fallen die vielen großen Blätter, dabei sind auch ein paar vielversprechende Stängel. Es überwiegt ein dunkles Braun, nur wenige Blätter erscheinen mittelbraun (die Fotos zeigen auf meinem Bildschirm einen grünen Hauch, den ich bei den Blättern nicht wahrnehme). Nochmal schnuppern: da ist der antike Apothekerschrank, den ich von alten Sheng erwarte. Im vorgewärmten Kännchen bekommt der Duft eine neue, mineralische Komponente: mir fällt gleich der Kalksteinbruch ein, wo ich als Kind mit meinen Großeltern voller Begeisterung Fossilien gesucht habe.
Nach der Spülung bekommt der Duft der Blätter eine wiederum neue & überraschende  Dimension: Kräuter wie Estragon, Spitzwegerich und mehr.

Let's now really get to the tea itself - starting as usual with the dry leaves: What an aroma - my nose takes me directly to the Indiana Jones movies! Only some few leaves still remain together from the original bing pressing. Big and healthy looking leaves catch the eye, accompanied by some promising stalks. (Yep - I am a verdant believer of the dogma "stalks round out a tea's taste"!). The dominant colour is an intense brown like cocoa beans with a few lighter shades of brown (the photographs show a greenish tint which I can't see on the actual leaves - sorry for the subpar pics!). Another sniff: there is the antique herbalist cabinet smelling of aged wood and traditional chinese medicine, just what I expect from mature sheng. In the preheated pot the leaves' fragrance takes on a new dimension: it reminds me of the limestone quarry where I used to go hunting for fossiles as a child.
Upon rinsing the leaves my nose detects yet another type of fragrance: fresh herbs like tarragon, plantain and more.



Erster Aufguss: dunkles, leicht rötliches Braun, sehr klar. Geschmack sehr gut, sogar etwas Liebstöckel ... aber eigentlich total nebensächlich. Dieses samtige, leicht cremige Mundgefühl! Dazu ein Qi, dass mich wie eine sanfte aber kraftvolle Welle trägt. Lang anhaltendes, cremiges Nachgefühl im Mund. Der nicht sehr süße Geschmack wird im Nachgeschmack immer süßlicher. Ist es nicht das, was man Huigan nennt?

First infusion: dark, slightly reddish brown, very clear. Taste is really good, there is even some lovage ... but taste is a marginality. This velvety and creamy mouthfeel takes centerstage! It comes wit a qi that floats me like a smooth but powerful wave. After swallowing the creamy feel lingers for a long time. The not so sweet initial taste is transformed into sweetness in the aftertase. Guess this is 'huigan'?

Third infusion / dritter Aufguss

Vierter Aufguss: weich und süß, auch cremig. Geschmacklich ist der Kartoffelkeller-Charakter feucht gelagerter Sheng zusammen mit dem Kalksteinbruch prominenter als der antike Apothekerschrank. Aber drauf gepfiffen ... das Gefühl, welches der Tee mir bereitet, ist einfach himmlisch!

Fourth Infusion: sweet and mellow, creamy. Tastewise the potatoe-storage basement character of humidly stored sheng takes the lead together with the limestone quarry impression, leaving the antique furniture note in the background. But who cares - the feeling of floating on a tropical surf is just heavenly!

Sixth infusion / sechster Aufguss

Achter Aufguss: schmeckt wie ich Rahmspinat von meiner Mutter kenne. Der mineralisch erdige geschmack des Spinats mit cremiger Sahne, süßen Zwiebackkrümeln darin und einer kräftigen Ladung Muskatnuss. Seltsam - einige alte Sheng schaffen es, Erlebnisse aus meiner Kindheit heraufzubeschwören. (anders als andere Kinder habe ich Spinat geliebt!)

8th Infusion: tastes like my mother used to cook spinach when I was a child. The earthy and mineralic taste of spinach is ballanced by cream, sweet breadcrumbs and loads of nutmeg. Strange how some old Sheng conjure childhood impressions. (Unlike most children I have always loved spinach!)


13. Aufguss: immernoch ein leckerer Wohlfühltee, aber die Dynamik ist fort und der Tee wird monoton genug, dass ich die Sitzung beenden kann.

13. Infusion: still a delicious feel good tea, but it has lost its dynamics and the tea starts to get a bit monotonous, so I call it a night and finish.

Infusion: big & beautiful!

Fazit: gut, dass ich keine Möglichkeit habe, diesen Tee zu kaufen. Das Dilemma von Budget versus Kaufverlangen wäre einfach zu heftig.

Conclusion: good that I don't know how to buy this tea! The fight between my desire to buy and budget restrictions on the other side would be too hard on me.

Am morgigen Sonntag ist die Abschlussprüfung für Frau L. Ich bin mir sicher, dass eine Teesommeliere, die so leckeren Tee einkauft, auch mit Bravour bestehen wird!

On Sunday tomorrow Mrs. L will go through the final exam. I am convinced that someone who buys such a marvellous tea will blow awa the jury and be a great Tea Sommeliere!
